Its the ring finger they cut off, and it’s explained in Origins. Bayek gets into a tussle with someone and as a last resort, uses the hidden blade to kill them. Because his fist was clenched, the blade cut off his ring finger. At some point, the hidden blade was fixed in a way where it wouldn’t be able to cut off the ring finger.
